What they change about a press-up
Flat on the floor your wrist is bent back at roughly 90 degrees under load. On a bar your wrist stays straight and the grip is neutral, the same position as holding a dumbbell. That is the whole point of them.
The second thing they do is give you depth. Your chest can travel below your hands, which you cannot do on the floor, so the same press-up becomes a longer movement.
